I think this falls under the category of "Everybody Knows This Recipe", but I had never before been able to get it to turn out this good, especially with chicken! And it's healthy too!! If you use low-fat soup, it can totally be a diet meal!
4 boneless, skinless chicken breasts
4 large potatoes
1 medium onion
1 green pepper
1 can cream of chicken soup
Pepper, salt, and Seasoned Salt (Lawrys is my choice!)
A tip i learned for perfect potatoes - bake them first! The chicken and soup just does not provide enough grease to properly cook the potatoes by the time the chicken is done. So wash your potatoes, wrap them in tin foil and bake them at 350 for 45 mins to an hour. Do this the night before, and throw the baked potato straight in the fridge to cool overnight - it's easier to cut up that way.
Cut two squares of tin foil for each chicken breast (pull it out so it's as long, or slightly longer than the width of the roll). Lay the first one down, shiney side UP, and spray with cooking spray. Salt and pepper your chicken on both sides and place on greased tin foil. Dice potatoes and pile on top of chicken. Sprinkle to taste with seasoned salt. Chop onion and green pepper and spread over potatoes (if you don't want to eat them, cut the chunks bigger and pull them out afterward. I keep them in there just to flavor the meat and potatoes). Spoon undiluted cream of chicken soup on top of veggies (about two tablespoons for each chicken breast).
Spray shiny side of second piece of tin foil and place on top. Roll edges of top and bottom foil together to form a packet.
Bake at 400 degrees for 35-40 minutes.
Unwrap and enjoy!!
The sauce that forms is just AMAZING!
You could probably add other random vegetables if you want. Broccoli might be nice. What do you like to add to your tin foil dinners?
